APPETIZERS
  • Bruschetta - CSB garden fresh San Marzano tomatoes diced with garlic, basil, olive oil, and drizzled with balsamic vinegar.  Served on toasted baguette.

  • Standard Charcuterie - Assortment of cheeses, meats, accoutrements

  • Bacon Wrapped Shrimp - Crispy bacon wrapped around large shrimp

  • Fruit and Vegetable Charcuterie Board - Fresh local vegetables including garden tomatoes, from our personal garden.  Local fresh fruits.

 

SALADS
  • Garden salad with CSB white balsamic dressing - Salad will be determined on fresh available greens, vegetables, and fruit may be incorporated.  Dressing will be a white balsamic vinaigrette.

  • Caesar Salad - Romaine lettuce tossed with CSB Caesar dressing topped with crispy croutons, black pepper and parmesan cheese.

  • Greek Salad - Available salad greens with chopped salami, pepperoncini, olives, red onion, cucumbers, artichoke hearts, mozzarella balls and garden fresh tomatoes.  Tossed in a Greek feta dressing.

 

ENTREES
  • Beef Tenderloin - Dry brined whole beef tenderloin smoked with a blend of pecan and oak wood.  Finished with reverse sear and sliced into medallions.

  • Rolled Chicken Thighs - Boneless rolled chicken thighs wet brined and rubbed with CSB Seasoning.  Smoked with a blend of apple and alder wood.  Finished with CSB BBQ Sauce.

  • Baby Back Ribs - Dry rubbed with CSB BBQ Spice Rub.  Smoked with hickory wood and finished with a CSB BBQ glaze.

  • Smoked Tri Tip - Dry brined tri tip sirloins lightly smoked with a blend of apple and cherry wood.  Finished with a reverse sear.

  • Pulled Pork - Bone in pork shoulder dry brined and rubbed with CSB BBQ Spices.  Smoked with a blend of alder and hickory wood.  Pulled in person at reception.  Served with bun.

  • Apple/Hickory Smoked Steelhead - 24-hour wet brined steelhead trout filets smoked with a blend of apple and hickory wood.

  • Grilled Potatoes - Roasted red potatoes tossed in garlic and pesto

  • Roasted Butternut Squash - Roasted butternut squash in olive oil and fresh herbs.

  • Roasted Brussel Sprouts - Brussel sprouts roasted with bacon, onions, garlic, and fresh herbs.  Topped with balsamic vinegar and grated parmesan cheese.

  • Rolls with Honey Butter - Peterson Honey blended with organic butter

Lox and Bagels Charcuterie Board - Open faced smoked salmon mini bagel with cream cheese, along with capers, onions, and fresh garden tomatoes.  Other protein and spreadable options can also be provided. Fruit and Vegetable Charcuterie Board - Fresh local vegetables including garden tomatoes, from our personal garden.  Local fresh fruits. Bruschetta - CSB garden fresh San Marzano tomatoes from our garden.  Diced with garlic, basil, olive oil, and drizzled with balsamic vinegar.  Served on toasted baguette. Caprese or Caprese Bites on Skewer - CSB garden fresh heirloom tomatoes from our garden.  Sliced think, topped with whole milk mozzarella and basil.  Drizzled with Cooper Winery olive oil and balsamic vinegar. Bacon Wrapped Shrimp - Crispy bacon wrapped around large shrimp. Shrimp Cocktail - Served with CSB Cocktail Sauce. RUSTIC SANDWICH OPTIONS Pulled Pork - Pork shoulders rubbed with CSB BBQ Spice and smoked over hardwood until tender.  Pulled and served on sandwich bun.   We can come up with a smaller hand size bun for this occasion. French Dip Sandwich - House made roast beef sliced thin and served with homemade au jus. TEA SANDWICH OPTIONS Smaller triangle shaped sandwiches, tea style Cucumber Egg Salad Chicken Salad
