A farm dinner with a Columbia River view

My Garden Over Floweth sits in Paterson, Washington, along the Columbia River region, where the views tend to do a lot of the talking. Even with indoor dining, the farm setting keeps the evening connected to the outdoors. It’s not the same feeling as sitting in a standard restaurant dining room. There’s more room to breathe, more sky in the picture, and a slower pace that fits the meal. That matters because a dinner like this isn’t meant to be rushed.

The menu starts with comfort and smoke

First up are CSB pork stuffed mushrooms with sherry sauce and parmesan. That’s a cozy start, rich and savory, with just enough sharpness from the parm and depth from the sherry sauce.

The second appetizer is shrimp and grits polenta rounds with tomato bacon jam. This one sounds like it’ll hit that sweet spot between Southern comfort and party bite. You get the creamy base of polenta, the shrimp, and then the tomato bacon jam bringing a little sweetness, smoke, and tang.

The soup course brings fall to the table

After the appetizers, the menu moves into a butternut curry soup with roasted pepitas and creme fraiche. Butternut squash brings natural sweetness, curry adds warmth, roasted pepitas give it crunch, and creme fraiche cools everything down with a creamy finish. Freshly baked sourdough bread will be served with the soup, and honestly, what could be better?

The main course is built around fire, smoke, and balance

This is where Caleb really gets to show off.

The menu includes picanha steak, cooked over a live fire, sliced thin and served with salsa verde. Picanha is known for its rich beef flavor and beautiful fat cap, and slicing it thin keeps it tender and easy to enjoy. The salsa verde should bring brightness, herbs, and a welcome punch against the grilled meat.

The second main protein is smoked steelhead, citrus wet brined for 24 hours, then smoked over oak and apple wood. A citrus brine helps season the fish while keeping it moist, and the oak and apple wood should bring a layered smoke flavor without overpowering the steelhead.

Set dining table with plates, silverware, napkins, and small floral centerpieces in a bright, sunlit room.
